Cress, Wild Winter

Barbarea vulgaris BRASSICACEAE
Sown and used like "creasy greens" or spinach. Highly nutritional healthy herb with dark-green, glossy leaves that grow in a basal rosette. For best quality harvest young leaves when the nights are cold and frosty. Excellent when added to salads or used as a cooked green. Older leaves and flower buds can be boiled with a change of water to remove bitterness when plants are past their prime.
